1. ku gua (苦瓜) bitter melon 2 Ib ( green not ripe melon)
2. Da suan (大蒜) garlic 3 claves
3. Sheng jiang (生姜) fresh ginger 3 slices
4. Qing cong (青葱) green onion 60 g
5. Sheng chou (生抽) soy sauce 1 tbp
Seasoning: pinch of salt
Cooking methods:
1. Wash the bitter melon, remove the seeds and cut the cucumber into slices, pinch 1
teaspoon of table salt on the cucumber and mix well, let it sit for 1 hour, then
rinse the salt from the cucumber.
2. Peeled garlic, cut into small pieces
3. Wash green onion and cut into about 2 inches long
4. Put 2 tbsp of vegetable oil into the hot pan, then put in ginger, garlic and onion
and stir-fried about 10 seconds
5. Add in black fungus and white fungus and soy sauce and stir-fried about 1 minute
6. Add in celery and stir-fried about 1 minute
7. Add ¼ cup of water and cover the lid until boiling
8. Pinch of salt and serve

💞Pan Fried Bitter Melon and Potatoes

Ingredients:
1 medium size - Bitter melon (Ku Gua)
2 tbsp - Vegetable oil, canola, grape seed, coconut or olive 2 tsp - Turmeric
2 cloves - peeled and minced
1 medium size - Onion, cut into 1/2 inch chunks
2 medium size - Potatoes , cut into 1/2 inch chunks
Salt to taste
Directions:
1. Cut the bitter melon in half lengthwise and scoop out the seeds with a spoon. Cut it in half
lengthwise again, then slice into 1/2 inch pieces across its width.
2. Heat the oil in a large saute pan, then add the turmeric, then the garlic, onions, potatoes and
bitter melon.
3. Cook covered over medium heat, stirring occasionally, for about 20 minutes, or until the
potatoes are cooked through. Add the salt to taste.

Directions:
1. In a small pot boil the water.

Silver Wrapped Fish with Tangerine Peel

Ingredients:
1 large piece (0.15 oz/4g) Dried Tangerine Peel (Chen Pi); 1 tbsp shredded pieces
1 lb Mild Fish (Mahi Mahi, Halibut, Haddock)
1 tbsp Kudzu/Arrowroot/Cornstarch/Thickener
2-3 tbsp cold Water
¼ tsp Salt
¼ tsp Pepper
2 tbsp Soy Sauce
1 tbsp Olive Oil
1 (1 inch) piece Fresh Ginger, peeled and grated or minced 1 medium sized Green Onion, chopped into ¼ inch pieces, roots and rough tips discarded
Directions:
1. Preheat oven to 350ºF
2. Soak dried tangerine peel in warm water until soft (15 mins). Remove from water. If
necessary, scrape off white pith and cut peel into small pieces
3. Place each piece of fish on a separate piece of aluminum foil
4. In a small bowl, mix thickener with cold water and brush this mixture over the fish.
Season the fish with salt, pepper, soy sauce and olive oil.
5. Place ginger, green onion and dried tangerine peel on top
6. Fold aluminum foil around the fish and securely roll the edges together to make a sealed
package. Use two pieces of foil if necessary to seal or cover any rips in the foil
7. Place aluminum packets on a baking pan or cookie sheet and bake for about 15 minutes
or until cooked

Jackfruit, Mango and Dill Salad

Vegan jackfruit salad made with shallot, fresh dill, mango, lemon zest and roasted poblano pepper. Perfect as an appetizer or side dish. Add plant-based protein and a whole grain for a satisfying meal.

Ingredients
• 1 large poblano pepper
• 1 ½ tablespoons grapeseed oil, divided (omit for oil-free)
• 1 (20 oz) can green jackfruit in brine, rinsed and drained well
• ½ teaspoon Old Bay seasoning, optional
• ¼ to ⅓ cup Oil-Free Vegan Aquafaba Mayo - Or sub your favorite vegan mayo.
• ¼ cup shallot, minced
• ½ lemon zested and juiced
• 1 tablespoon chopped fresh dill
• sea salt
• black pepper
• 1 mango
• parsley, optional
Instructions
Roast the poblano pepper (time tip: sauté the jackfruit while the pepper roasts):
• Preheat oven to 425 degrees F. Wash and dry the pepper. Rub with a teaspoon of oil and place on a baking sheet. Bake for 6 to 8 minutes per side, using tongs to carefully flip the pepper. When the skin is wrinkled and shows an even amount of char, remove from the oven and place in a glass bowl. Cover and let steam 5 to 10 minutes.
• Uncover the bowl and peel the pepper. Slice off the stem end, remove the seeds, and chop. Set aside.
Prep the jackfruit:
• As mentioned in the post, to reduce the amount of brine flavor, place the rinsed and drained jackfruit it in a bowl and cover with water. Let sit for a few minutes, then drain again. Place jackfruit on a tea towel, gather the ends of the towel together, and hold it over the sink while squeezing out most of the liquid. Use your hands to tear the jackfruit into bite size pieces, discarding any tough pieces of core.
• Preheat a sauté pan over medium heat. Add the tablespoon of oil and the jackfruit. Cook 3 to 5 minutes, stirring occasionally. Add Old Bay seasoning, and stir to coat. Add a few tablespoons of water, cover the pan and allow the jackfruit to steam for 2 to 3 minutes. Add the lemon juice and a pinch of salt and stir. Remove from heat and let cool to room temperature.
Assemble the salad:
• Place the jackfruit in a bowl and add ¼ cup mayo, poblano, shallot, lemon zest, and dill. Stir to combine. Taste and add salt, pepper, and more mayo, if desired. Peel the mango. Use a paring knife or vegetable peeler to slice thin ribbons. Transfer jackfruit salad to a serving bowl and top with the mango. Garnish with parsley and/or more dill.

Wear a pair of rubber gloves if you don't want the juice to stain your hands.

While you can buy turmeric tea bags at the market, I love this easy homemade version. Here’s what you need to make it:
• Turmeric: I use ground turmeric in this recipe as it’s a staple item in my spice drawer and I always have it on hand.
• Lemon Juice: Freshly squeezed lemon juice lends a bright pop of citrus flavor.
• Honey: I like my tea with a hint of sweetness. If you prefer, you can use maple syrup instead of honey.
• Black Pepper: Just a pinch of black pepper helps your body absorb the curcumin from the turmeric.

How to Make Turmeric Tea
If you can boil water, you can make turmeric tea! There’s just three simple steps:
• Mix: Add the water, turmeric, lemon juice, honey, and black pepper to a small pot, then whisk together.
• Simmer: Bring the liquid to a boil, then turn the heat down to medium-low and simmer for 10 minutes.
• Serve: Let the tea cool for a minute or two. Then pour into your favorite mug and enjoy!
Ginger Shots! Shots! Shots!
Ginger shots are intensely flavored drinks that deliver a super-concentrated burst of ginger juice. They’ve become very popular items at juice bars and grocery stores for their powerful anti-inflammatory, immune-boosting, and antioxidant properties
Ginger Shot Ingredients
Similar to Kor brand, Raleys, publux, aldi etc. (or other supermarket brand) wellness shots, there’s just 4 ingredients in this recipe:
• Ginger: For the strongest flavor, I recommend using fresh ginger root. But check out my tips below on using dried ginger.
• Lemon Juice: Freshly squeezed lemon juice will always provide a brighter flavor than jarred lemon juice. So that’s what I use!
• Coconut Water: Coconut water adds a little natural sweetness to balance the pungent ginger lemon flavor.
• Cayenne Pepper: Just a pinch of cayenne pepper gives these shots a kick of heat, and it can also improve circulation and digestion.
How to Make Ginger Shots
You don’t need a fancy (and hard to clean) juicer to make ginger shots. Just pull out your high-powered blender and a fine-mesh strainer and whip them up!
• Wash and chop ginger root. No need to peel the ginger since you’ll be straining the juice before drinking it. Just roughly chop it to make blending easier.
• Juice fresh lemons. The bright citrus flavor of fresh lemon juice pairs well with the ginger and tastes much better than bottled lemon juice. It also gives you a healthy dose of Vitamin C.
• Blend until smooth. Blend the ginger pieces and lemon juice until no chunks of ginger remain.
• Strain well. Straining the ginger and lemon mixture helps remove bits of ginger peel and those pesky ginger fibers! To get the most juice, press the solids with the back of a spoon when straining.
• Serve. Ginger shots are meant to be drunk all at once as a quick shot. Be careful not to drink more than one shot a day since too much ginger can cause heartburn

Definitely a life savior when in need, and you may just have them in your garden or neighborhood.
An herbal tincture is a concentrated liquid form of one or more herbs. To make a tincture, a person must soak parts of an herb in alcohol or vinegar. Herbal tinctures may be available to purchase but they are not regulated in the United States.
The soaking process extracts the active components of the herb or herbs. Alcohol is often the liquid of choice, as it can extract components, such as resins and alkaloids, that are not water-soluble.
People usually take tinctures orally by using a dropper to place the liquid under their tongue.
Depending on the types of herbs involved, tinctures can include various parts of the plant. Some of the most common parts in herbal tinctures include:
• dried leaves
• bark
• berries
• roots
• fresh leaves
A person can purchase tinctures online, at health and wellness stores, and in some grocery or drug stores.
The United States Food and Drug Administration (FDA) do not regulate the creation or use of herbal tinctures. A person should speak to their doctor before using a tincture, especially if they take medications.
Herbal tinctures may not be safe to create at home. Certain parts of plants can be toxic and harmful to humans when used topically or ingested.
A person should fully understand which parts of a plant are safe before attempting to make their own tinctures.
A common method of creating a tincture includes the following basic steps:
• Gather the useful parts of the herb(s), possibly the berries, leaves, roots, bark, or all of these, and remove any unwanted parts.
• Wash and coarsely chop the herbs.
• Place them into an airtight jar.
• Pour alcohol or vinegar into the jar and seal it. For fresh herbs, use a 1-1 plant-to-alcohol ratio. For dried herbs, use a 1-4 ratio.
The concentration of alcohol depends on the plant’s water-soluble ingredients. Those with more water-soluble components need alcohol with a proof of 80–100, while those with fewer water-soluble components need 180-proof alcohol.
Seal the jar for 6 or more weeks to give the alcohol time to absorb the active components of the herbs. Shake it occasionally.
After opening the jar, strain the plant parts from the liquid. Be sure to label the jars with some basic information about the tincture, such as:
• the common or Latin names of the herbs used
• the parts of the plants and whether they were fresh or dried
• the type of alcohol and its concentration
• the date of creation
• instructions on how to use the tincture
How to use
To use a tincture, fill a dropper or small syringe with the liquid and drip it into the mouth, just under the tongue. Hold the tincture in the mouth for a few seconds before swallowing.
Rinse the mouth thoroughly with water to get rid of the bitter taste. The precise dosage a person should take depends on their age, but it is best not to take more than 2 small full droppers. Do not give tinctures to children.

Elderberry contains an antioxidant called anthocyanin. Research suggests that anthocyanins can help reduce inflammation. An elderberry tincture may be able to replicate the effects.
Cannabis
Cannabis tincture could offer several health benefits.
In recent years, researchers have recognized the potential for cannabis to treat pain, seizures, and nausea.
According to the U.S. Department of Health and Human ServicesTrusted Source, the FDA have only approved three cannabis components for use in medicine: dronabinol, nabilone, and cannabidiol, which is commonly known as CBD.
However, the FDA also state that it is illegal for manufacturers to create cannabis supplements.
A person should check with their state and local laws before attempting to make their own cannabis tincture
Turmeric
Turmeric contains curcumin, an anti-inflammatory and antioxidant compound. Many people around the world use turmeric as a spice in foods.
Some people may use turmeric tinctures to help relieve inflammation. A 2017 systematic reviewTrusted Source indicated that curcumin has a positive impact on osteoarthritis knee pain, which is related to inflammation.
However, the study also showed that curcumin was less effective in relieving pain than ibuprofen.
Benzoin
Benzoin is an essential oil that may help treat topical skin issues.
In a review of studiesTrusted Source that investigated several essential oils, researchers identified benzoin as being potentially effective at treating minor cuts and skin issues.
Historically, people have used benzoin tinctures beneath bandages to help heal wounds and protect the skin.
Benzoin is only safe for topical use — do not ingest it.
Echinacea
Echinacea is a common herbal supplement and tincture that many people use to boost their immune system. However, research does not fully support its use for fighting infections.
One review examined 24 studies that investigated echinacea’s potential to treat the common cold. The review concluded that echinacea provided no benefits in this respect.
Risks and side effects
Herbal tinctures, like herbal supplements, have several potential side effects. Many people presume that herbal, natural, and safe are synonymous. Just because a remedy is “herbal” or “natural” does not necessarily mean that it is safe or effective.

Before making and using an herbal tincture, a person should consider:
• possible interactions with current medications
• safe ways to use the tincture, as some may be toxic

Before attempting to make an herbal tincture at home, note that some plants have toxic parts. Many people prefer to buy tinctures instead.
A person should be knowledgeable about the plant and understand the potential for toxicity and exposure to pesticides before trying to make a tincture.
